SLOW DOWN


I read this article about slow cooking in the LA Times and thought it sounded like a fun idea. Given the laundry list of positives they listed, I didn't feel like I had much choice. The LA Times basically FORCED us to cook food slowly at low temperatures.

We figured we'd start with the salmon recipe. The total running time was actually not that insane and well ... we love salmon.

Nothing much to report on the salmon prep. Just some olive oil, salt and pepper. The spinach mix that accompanied the fish included:
- spinach
- shiitake mushrooms
- pine nuts
- homemade pesto
- sesame oil

The fish was good. Meena didn't like it that much. I thought it was OK. The article was up front about times and temps being different for every oven and that experimentation was necessary. I think we'd leave the fish much longer than 30 minutes. Something like 50 is probably better. The spinach mix was really nice though. Excellent flavor and it went well with the salmon.
