We hadn't done short ribs in a minute so we decided to pick a couple up when we were at the butcher on Saturday. They just looked right. So we figured, what the heck?

So while we did our stuff during the day, we threw them in the crock pot with the following:
- beer
- brown sugar
- apple cider vinegar
- garlic

And after they'd stewed all day, I broke them up and threw them over some ragu:
- tomatoes
- braising liquid
- sea salt
- black pepper
- balsamic vinegar

Finally, I whipped up some veg:
- brussels sprouts
- mustard seeds
- dijon mustard
- apple cider vinegar
- leeks
- olive oil
- sea salt

I think it worked. The sprouts weren't the best ever but they were OK. And the ribs weren't quite as good as the last time I made them but they were OK. The ragu gave them a little pop of acidity and tartness to mellow all that rich, ribby flavor.

Not a bad way to close out the weekend.
